Egg and Potato Skillet Bake

Ingredients

  • 2 whole eggs
  • 1 medium russet potato
  • Mozzerella cheese(Optional)

    • Directions

  • Spray pan with olive oil
  • Dice or thinly slice russet potato and add to pan over medium heat
  • Let potatos cook for 6-7 minutes,cook longer if needed
  • Once potatoes are mostly cooked, lower heat slightly and add in eggs
  • Once eggs are cooked, top with cheese if wanted
  • Enjoy!
